  • 1 cup almond flour Can replace 1/4 cup with ground flaxseed or oat fiber for added fiber.
  • 2 large eggs
  • 1 tablespoon baking powder Ensure gluten-free if necessary.
  • 1 teaspoon salt
  • 1 tablespoon garlic powder Optional for a savory flavor.
  • 1 tablespoon herbs (such as rosemary or thyme) Optional for added flavor.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine Greek yogurt, almond flour, eggs, baking powder, salt, and any optional ingredients.
  3. Mix until a smooth dough forms.
  4. Pour the batter into a greased loaf pan.
Baking
  1. Bake for 30-35 minutes until the top is golden and a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze slices for up to 3 months. Reheat slices in a toaster oven or air fryer for a few minutes.
