Ingredients
  

For the Blondie Base
  • 200 g white chocolate, chopped
  • 100 g unsalted butter
  • 200 g brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • a pinch salt
Add-ins
  • 150 g white chocolate chips
  • 100 g pitted cherries, chopped

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) to ensure even baking.
  2. Line an 8x8-inch baking pan with parchment paper for easy removal.
  3. In a microwave-safe bowl, combine the chopped white chocolate and butter. Microwave in short bursts, stirring until melted and smooth.
  4. In a separate bowl, whisk together brown sugar, eggs, and vanilla extract. Slowly add the melted chocolate mixture and mix until smooth.
  5. Sift together flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Avoid overmixing.
  7. Fold in the white chocolate chips and chopped cherries.
  8. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Place the pan in the preheated oven and bake for about 25-30 minutes, until golden and slightly firm to the touch.
  2. Once baked, remove from the oven and let cool completely in the pan on a wire rack.
Serving
  1. Lift the blondies out using the parchment paper, and cut into squares or rectangles for serving.
  2. Serve warm or at room temperature, optionally with vanilla ice cream or dusted with powdered sugar.

Notes

For variations, try adding chopped nuts, using mixed berries, drizzling melted chocolate on top, or incorporating cookie crumbs into the batter. Store in an airtight container for up to a week, or freeze individually wrapped for up to three months.
