Ingredients
  

For the pastry and filling
  • 2 sheets sheets of puff pastry Use vegan & gluten-free puff pastry sheets.
  • 100 g fresh or frozen blueberries If using frozen, allow to thaw slightly.
  • 50 g caster or granulated sugar Plus extra for sprinkling.
  • 2 tablespoons cornstarch or cornflour For thickening the filling.
  • 2 teaspoons lemon juice
  • 50 g icing sugar For the icing on top.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine blueberries, sugar, cornstarch, and lemon juice. Stir gently.
  3. Roll out the puff pastry sheets on a lightly floured surface until even and smooth.
  4. Cut the pastry into ghost shapes using a cookie cutter or knife.
  5. Place a spoonful of the blueberry filling onto one side of each ghost shape.
  6. Fold the other side of the pastry over the filling and press edges together to seal.
  7. Transfer the hand pies to the baking tray. Brush with water or plant-based milk.
  8. Sprinkle extra sugar on top.
Baking
  1. Bake in the preheated oven for 15-20 minutes until golden brown.
  2. Remove from oven and let cool on a wire rack.
  3. Prepare the icing by mixing icing sugar with a little water and drizzle on cooled pies.

Notes

Serve warm or at room temperature. Pairs well with tea or coffee.
