  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Add-ins
  • 1 cup shredded zucchini, squeezed dry Make sure to squeeze out excess moisture.
  • 1/2 cup chocolate chips Optional, for extra chocolate flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and cocoa powder until smooth.
  3. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Mixing
  1. In a separate bowl, whisk together the flour, baking powder, and salt.
  2. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  3. Gently fold in the shredded zucchini and chocolate chips if using.
Baking
  1. Pour the batter into the prepared baking pan and spread it evenly.
  2. Bake in the preheated oven for about 25-30 minutes. Check for doneness with a toothpick.
  3. Once baked, let cool in the pan on a wire rack, then cut into squares.

Notes

For a special presentation, serve with ice cream or dust with powdered sugar. They can be stored in an airtight container for 3-5 days.
