Ingredients
  

Cheese Mixture
  • 16 oz cream cheese, softened Use regular or low-fat cream cheese
  • 2 cups shredded cheddar cheese Sharp or mild cheddar can be used
  • 1 cup shredded Parmesan cheese Freshly grated for best flavor
  • 2 tablespoons fresh parsley, finely chopped Can substitute with other fresh herbs
  • 1 tablespoon fresh thyme, finely chopped Fresh thyme enhances flavor
  • 1 teaspoon garlic powder Adjust based on preference
  • 1/2 teaspoon onion powder Optional ingredient for more flavor
  • 1/4 teaspoon cayenne pepper Add more for a spicier kick
Coating
  • 1 cup chopped pecans or walnuts Nut of choice for rolling

Method
 

Preparation
  1. In a large bowl, combine the softened cream cheese, cheddar cheese, Parmesan cheese, parsley, thyme, garlic powder, onion powder, and cayenne pepper. Mix until well blended.
  2. Form the cheese mixture into a ball and place it on a piece of plastic wrap. Wrap the ball tightly and refrigerate for at least 2 hours, or until firm.
  3. In a shallow bowl, combine the chopped pecans or walnuts. Unwrap the chilled cheese ball and roll it in the nut mixture, pressing gently to adhere.
  4. Place the coated cheese ball on a serving platter and serve with crackers, sliced bread, and fresh vegetables.

Notes

Store leftovers tightly wrapped in plastic for up to 5 days or freeze for up to 2 months. Serve with assorted dippers such as sliced baguette and fresh vegetables.
