  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Method
 

Preparation
  1. In a large bowl, mix together the diced cucumber, crab meat, and red onion.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper.
  3. Pour the dressing over the cucumber and crab mixture, and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with fresh dill or parsley and serve.

Notes

For a healthier version, substitute Greek yogurt for mayonnaise. This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for 2-3 days.
