  • 2 medium sweet potatoes, peeled and diced
  • 1 pound ground turkey
  • 1 cup roasted corn
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic; cook until softened, about 3-5 minutes.
  3. Add ground turkey to the pot and cook until browned, about 5-7 minutes.
  4. Stir in diced sweet potatoes, roasted corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Mix well.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until sweet potatoes are tender.
  6. Serve hot and enjoy with your favorite toppings.

Notes

For serving, consider toppings like shredded cheese, avocado, cilantro, or sour cream. The chili can be served with crusty bread or warm tortillas. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
