Salad Base
  • 2 cups mixed greens Variety of leafy greens
  • 1 cup cherry tomatoes, halved Fresh cherry tomatoes for sweetness
  • 1 cup cucumber, diced Adds crunch and hydration
  • 1 orange, segmented For a burst of citrus flavor
  • 1/4 cup red onion, thinly sliced Adds a slight sharpness
  • 1/4 cup feta cheese, crumbled Optional, for creaminess
  • 1/4 cup walnuts, chopped Provides healthy fats and crunch
Dressing
  • 2 tablespoons olive oil Base for the dressing

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, orange segments, and red onion.
  2. Sprinkle the feta cheese and walnuts on top.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately.

Notes

For meal prep, keep the dressing separate until ready to eat. Store in an airtight container in the fridge for up to 24 hours. Not suitable for freezing.
