Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs. Mix until well combined.
- Fold in the chopped strawberries and white chocolate chips if using.
- Scoop the dough onto the prepared baking sheet, about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges are slightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with powdered sugar before serving if desired.
Notes
These cookies are best enjoyed fresh but can be stored in an airtight container for up to three days. For freezing, layer them with parchment paper and store for up to three months.
