Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
For the strawberry glaze
  • 1 cup powdered sugar
  • 2 to 3 tablespoons strawberry puree Adjust for desired flavor strength.
  • 0.25 teaspoon vanilla extract For glaze.
  • Fresh strawberry pieces (for garnish)
  • Gold sprinkles (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the large egg and one teaspoon of vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until a dough forms.
Baking
  1. Use a spoon or cookie scoop to drop dough balls onto the prepared baking sheets with space between each cookie.
  2. Flatten each dough ball slightly and bake for 10 to 12 minutes or until edges are golden brown.
  3. Remove cookies from the oven and let them cool on a wire rack.
Glazing
  1. Prepare the glaze by whisking together the powdered sugar, strawberry puree, and vanilla extract until smooth.
  2. Once cookies are cool, spread the strawberry glaze on top of each cookie.
  3. Garnish with fresh strawberry pieces and gold sprinkles, if using.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer separated by parchment paper for up to three months.
