Preparation
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the large egg and one teaspoon of vanilla extract, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until a dough forms.
Baking
- Use a spoon or cookie scoop to drop dough balls onto the prepared baking sheets with space between each cookie.
- Flatten each dough ball slightly and bake for 10 to 12 minutes or until edges are golden brown.
- Remove cookies from the oven and let them cool on a wire rack.
Glazing
- Prepare the glaze by whisking together the powdered sugar, strawberry puree, and vanilla extract until smooth.
- Once cookies are cool, spread the strawberry glaze on top of each cookie.
- Garnish with fresh strawberry pieces and gold sprinkles, if using.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer separated by parchment paper for up to three months.
