Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup homemade strawberry jam
  • 2 cups fresh strawberries, sliced
For the frosting
  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1-2 tablespoons milk (for frosting)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes. Stir in the boiling water until well combined.
  4. Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Assembling
  1. Allow cakes to cool for 10 minutes in the pans before transferring to wire racks to cool completely.
  2. Once cooled, spread strawberry jam between the layers and add sliced strawberries on top.
Making the Frosting
  1. For the frosting, beat cream cheese and butter together until smooth.
  2. Gradually add powdered sugar, vanilla, and milk until the desired consistency is reached.
Frosting the Cake
  1. Frost the top and sides of the cake with the cream cheese frosting. Decorate with additional fresh strawberries if desired.

Notes

Store in an airtight container in the fridge for up to a week, or freeze wrapped slices for up to three months. Consider healthier substitutions such as whole wheat flour and sugar alternatives.
