Preparation
- Place the cod fillets in a steamer. Squeeze the juice of one lime over them.
Cooking the Cod
- Steam the fish for about 15 minutes or until it is cooked through.
Cooking the Sprouts
- In a pan, heat the vegetable or sunflower oil over medium heat.
- Add the finely chopped garlic and ginger. Sauté for about a minute until fragrant.
- Add the trimmed Brussels sprouts and stir-fry them for about 5-7 minutes, until golden brown and slightly tender but still crisp.
- Pour in the fish sauce, caster sugar, and zest of the other lime. Mix well to combine.
- Cook the Brussels sprouts for another 2 minutes until tender yet still crunchy.
Serving
- Serve the steamed cod on a bed of cooked rice, topped with the Brussels sprouts and sprinkled with sesame seeds.
