Ingredients
  

For the Cod
  • 480 g Icelandic cod fillets
  • 2 unwaxed limes (for zest and juice)
For the Sprouts
  • 400 g Brussels sprouts, trimmed
  • 1 clove garlic, finely chopped
  • 20 g ginger, peeled and finely chopped
  • 3 tbsp nam pla fish sauce
  • 1.5 tbsp caster sugar
  • 1 tbsp vegetable or sunflower oil
  • 2 tbsp sesame seeds
For the Rice
  • 500 g sticky or jasmine rice

Method
 

Preparation
  1. Place the cod fillets in a steamer. Squeeze the juice of one lime over them.
Cooking the Cod
  1. Steam the fish for about 15 minutes or until it is cooked through.
Cooking the Sprouts
  1. In a pan, heat the vegetable or sunflower oil over medium heat.
  2. Add the finely chopped garlic and ginger. Sauté for about a minute until fragrant.
  3. Add the trimmed Brussels sprouts and stir-fry them for about 5-7 minutes, until golden brown and slightly tender but still crisp.
  4. Pour in the fish sauce, caster sugar, and zest of the other lime. Mix well to combine.
  5. Cook the Brussels sprouts for another 2 minutes until tender yet still crunchy.
Serving
  1. Serve the steamed cod on a bed of cooked rice, topped with the Brussels sprouts and sprinkled with sesame seeds.

Notes

Pair with a side of salad or pickled vegetables. Consider a refreshing drink like iced tea or lemonade.
