Ingredients
  

Noodle and Broth Ingredients
  • 2 packets ramen noodles (seasonings discarded)
  • 4 cups vegetable broth Can substitute with chicken or beef broth
  • 1 teaspoon sesame oil
  • 1 small red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons chili sauce Adjust amount to control spiciness
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar

Method
 

Preparation
  1. In a non-stick skillet or pan, add the sesame oil and place it over medium heat. Let the oil become hot.
  2. Once the oil is hot, add the sliced onion and halved cherry tomatoes. Cook for about one minute.
  3. Add the chili sauce and cook for an additional 2-3 minutes, until the onions become translucent.
Blending the Broth
  1. Transfer the cooked mixture into a blender. Add the vegetable broth, soy sauce, rice vinegar, and brown sugar. Blend everything until it becomes smooth.
Cooking the Ramen
  1. Pour the blended broth into a saucepan and bring it to a boil over medium heat.
  2. Once it starts simmering, add the ramen noodles. Cook according to the package instructions or until they are al dente.
  3. Once cooked, your spicy ramen is ready. You can top it with sesame seeds, green onions, and soft-boiled eggs for extra flavor.

Notes

Can be stored in an airtight container in the refrigerator for up to three days. For freezing, store broth and noodles separately.
