Ingredients
  

For the dough
  • 227 grams ripe sourdough starter
  • 240 grams whole milk warm
  • 1 large egg
  • 540 grams bread flour (or all-purpose flour)
  • 45 grams granulated sugar (or honey)
  • 12 grams kosher salt
  • 85 grams unsalted butter melted
For the topping
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • flaky sea salt

Method
 

Day One - Making the Dough
  1. Combine all the dough ingredients in a stand mixer bowl.
  2. Mix on low speed until they form a cohesive dough.
  3. Knead the dough for 5 to 10 minutes until smooth and elastic.
  4. Transfer the dough to an oiled bowl and cover with plastic wrap.
  5. Let the dough rise in a warm place for about 2 hours.
  6. After rising, divide the dough into 15 equal pieces and shape into balls.
  7. Place the balls in a greased 9x13 inch baking pan and cover.
  8. Refrigerate overnight.
Day Two - Baking
  1. Take the rolls out of the fridge and let them sit at room temperature for 1 to 2 hours.
  2. Preheat your oven to 350°F (175°C).
  3. Brush the tops of the rolls with melted butter.
  4. Sprinkle flaky sea salt on top of the rolls.
  5. Bake the rolls for 20 to 25 minutes until golden brown.
  6. Brush them with the butter and honey mixture after removing from the oven.
  7. Serve the rolls warm and enjoy!

Notes

Store in an airtight container for up to 3 days or freeze individually wrapped for up to 3 months. They pair excellently with soups, stews, and salads.
