Ingredients
  

For the Cookies
  • 1 box strawberry cake mix Any brand of cake mix works
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract For enhanced flavor
  • 1/2 cup powdered sugar For dusting the cookies
For the Filling
  • to taste frosting or filling of choice Can be store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are incorporated.
  3. Using a tablespoon, scoop out the cookie dough and roll it into balls. Place them on the lined baking sheets, leaving enough space between each ball.
Baking
  1. Bake in the preheated oven for about 10-12 minutes, or until they are slightly golden around the edges.
  2. Once baked, allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once the cookies are cool, spread your choice of frosting or filling on the flat side of one cookie and top with another cookie to create a sandwich.
  2. Lightly sift powdered sugar over the top of the cookies if desired.

Notes

These cookies can be stored in an airtight container at room temperature for up to three days or frozen for up to three months. Thaw at room temperature before serving.
