Preparation
- Cut small indents in the mozzarella balls to create the base for the 'eye' and set them aside.
- Finely chop the kalamata olives and place them into the indents on the mozzarella balls.
- Cut the pepperoni stick into small pieces about 3/4 inch long and make thin slices that are about 1/4 to 1/2 inch thick.
- Slice the red bell pepper into small wedge-shaped pieces for decoration.
Assembly
- Start building the skewer by adding a piece of red bell pepper, followed by a chunk of pepperoni, and then the mozzarella ball with the olive 'eye.' Add a thicker slice of pepperoni and then a few thin slices of pepperoni followed by another mozzarella ball.
Serving
- Refrigerate the assembled skewers before serving on a Halloween-themed platter.
Notes
Serve on a festive platter with decorations like fake spider webs or Halloween-themed napkins. Best enjoyed fresh but can be stored in an airtight container in the refrigerator for 1-2 days. Do not freeze.
