Ingredients

  • 1 cup mozzarella balls
  • 1 medium red bell pepper for decoration
  • 2 tablespoons kalamata olives finely chopped
  • 4 ounces pepperoni stick

Method
 

Preparation
  1. Cut small indents in the mozzarella balls to create the base for the 'eye' and set them aside.
  2. Finely chop the kalamata olives and place them into the indents on the mozzarella balls.
  3. Cut the pepperoni stick into small pieces about 3/4 inch long and make thin slices that are about 1/4 to 1/2 inch thick.
  4. Slice the red bell pepper into small wedge-shaped pieces for decoration.
Assembly
  1. Start building the skewer by adding a piece of red bell pepper, followed by a chunk of pepperoni, and then the mozzarella ball with the olive 'eye.' Add a thicker slice of pepperoni and then a few thin slices of pepperoni followed by another mozzarella ball.
Serving
  1. Refrigerate the assembled skewers before serving on a Halloween-themed platter.

Notes

Serve on a festive platter with decorations like fake spider webs or Halloween-themed napkins. Best enjoyed fresh but can be stored in an airtight container in the refrigerator for 1-2 days. Do not freeze.
