Ingredients
  

Meat and Vegetables
  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn) You can use fresh vegetables if preferred.
  • 2 tablespoons tomato paste
  • 1 cup beef broth Use low-sodium broth for a healthier option.
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
Mashed Potatoes
  • 3 cups mashed potatoes (prepared from about 3 large potatoes) Leftover mashed potatoes work great for this recipe.
  • 2 tablespoons butter For dotting on top.
  • 1/4 cup shredded cheddar cheese (optional) Use for added flavor.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, cook ground beef over medium heat until browned; drain excess fat.
  3. Add chopped onion and minced garlic to the skillet; cook until softened, about 3-4 minutes.
  4. Stir in frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper.
  5. Simmer the mixture for 5-7 minutes until slightly thickened.
  6. Transfer the beef mixture to a casserole dish, spreading evenly.
  7. Top with prepared mashed potatoes, spreading to cover the filling completely.
  8. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if using.
  9. Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 2 months. Reheat well before serving.
