Ingredients
  

Dry Ingredients
  • 3/4 + 1.5 tbsp bread flour (108 g) Higher protein content.
  • 2.5 cups bread flour (322 g) Essential for chewy texture.
  • 1/2 tsp instant dry yeast (2 g) For fermentation.
  • 1.5 tbsp honey or brown sugar (22 g) Natural sweetener.
  • 1 tbsp neutral oil (14 g) Keeps dough moist.
  • 10-16 tbsp salted butter (144-224 g) Adjust based on preference.
Wet Ingredients
  • 3/4 cup water (180 ml) For hydrating dough.
  • 1/2 cup water (125 ml) Cold water for dough.
  • 2/3 cup boiling water Used during boiling for texture.
Toppings
  • rock salt, pretzel salt, or flaky salt For topping bagels.
  • malt syrup, molasses, sugar, or baking soda For boiling to enhance color and flavor.

Method
 

Prepare the Dough
  1. Mix the dry ingredients in a large mixing bowl.
  2. Add the boiling water to the flour mixture, then the remaining cold water, honey or brown sugar, and neutral oil. Mix until a dough forms.
  3. Knead the dough for about 10–15 minutes on a floured surface until you achieve a smooth and elastic texture.
  4. Divide the dough into 40 pieces and shape them into bagels.
Prepare for Boiling
  1. Bring a pot of water to a boil, adding malt syrup, molasses, sugar, or baking soda for flavor.
  2. Gently drop the bagels into the boiling water, boiling for 1–2 minutes on each side.
Bake the Bagels
  1. Preheat the oven to 375°F (190°C) and bake the bagels for about 20–25 minutes or until golden brown.

Notes

These bagels are meal prep friendly and can be frozen for later use. Customize flavors by adding herbs, garlic, or cheese.
