Ingredients
  

For the Red Velvet Base
  • 1 and 1/4 cups all-purpose flour (spooned & leveled)
  • 1 Tablespoon unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 Tablespoon liquid red food coloring
For the Topping
  • 1 and 1/3 cups sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1 14-ounce can sweetened condensed milk
  • 1 cup chopped pecans

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C) and line a 9x13-inch or 11x7-inch baking pan with aluminum foil or parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another large bowl, beat the softened butter until creamy, then add granulated sugar and beat until fluffy.
  4. Add the egg and vanilla, mixing until well combined. Then add red food coloring and mix thoroughly.
  5. Slowly add the dry mixture to the wet mixture until combined and the dough is thick and sticky.
  6. Spread the sticky dough evenly in the prepared baking pan and bake for 8 minutes.
Topping and Baking
  1. Sprinkle the coconut evenly over the cookie layer, followed by the chocolate chips and then the white chocolate chips.
  2. Pour the sweetened condensed milk evenly over the layers and top with chopped pecans.
  3. Return to the oven and bake for an additional 25 minutes until set.
  4. Let the bars cool on a rack for at least 2 hours before cutting into squares.

Notes

These bars can be served plain or topped with whipped cream or ice cream. Store in an airtight container.
