Ingredients
  

For the Dip
  • 8 oz block of feta cheese, drained from brine Approximately 220 grams
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 1-2 Tbsp honey Plus more, to serve
  • 1 tsp dried thyme Or 2 tsp fresh thyme
  • to taste Black pepper Freshly cracked
  • to garnish Fresh thyme Can use dried, if needed
  • optional Chopped walnuts Raw or toasted
  • to drizzle Extra honey
For Serving
  • to taste Crusty, toasted bread (like sourdough or baguette)
  • to taste Crackers

Method
 

Preparation
  1. Combine the feta cheese and Greek yogurt in a food processor and blend until smooth.
  2. Add the pumpkin puree, honey (1 or 2 tablespoons depending on desired sweetness), thyme, and black pepper. Blend again until well combined.
  3. Transfer the whipped feta mixture to the fridge and chill for 30-60 minutes.
Serving
  1. Once chilled, transfer the dip to a serving bowl and garnish with chopped walnuts, fresh thyme, an extra drizzle of honey, and additional black pepper.
  2. Serve with crusty, toasted bread or crackers.

Notes

Store in an airtight container in the refrigerator for 3-5 days or freeze in a freezer-safe container. Thaw in the fridge overnight before serving.
