Preparation
- Combine the feta cheese and Greek yogurt in a food processor and blend until smooth.
- Add the pumpkin puree, honey (1 or 2 tablespoons depending on desired sweetness), thyme, and black pepper. Blend again until well combined.
- Transfer the whipped feta mixture to the fridge and chill for 30-60 minutes.
Serving
- Once chilled, transfer the dip to a serving bowl and garnish with chopped walnuts, fresh thyme, an extra drizzle of honey, and additional black pepper.
- Serve with crusty, toasted bread or crackers.
Notes
Store in an airtight container in the refrigerator for 3-5 days or freeze in a freezer-safe container. Thaw in the fridge overnight before serving.
