Preparation
  1. Dice the pineapple into small, even pieces for a good texture.
  2. Finely chop the red onion and red bell pepper.
  3. Roughly chop the cilantro.
  4. Chop the jalapeno slices to your spice preference.
  5. In a medium bowl, add all the diced and chopped ingredients.
  6. Sprinkle 1 teaspoon of salt over the mixture.
  7. Pour in 2 tablespoons of lime juice.
  8. Mix everything well using a spoon and adjust lime juice or salt as needed.
  9. Cover and refrigerate for at least one hour to meld flavors.

Notes

Store in an airtight container for 3-5 days in the fridge. Avoid freezing due to texture changes. Great for meal prep and can be served as a dip or topping for various dishes.
