Ingredients
  

For the Skewers
  • 1 pound pork tenderloin, cut into cubes Use lean cuts for a healthier option.
  • 1 cup pineapple chunks Fresh or canned in juice.
  • 1/2 cup BBQ sauce Choose a low-sugar BBQ sauce for a healthier option.
  • 1 each red bell pepper, cut into chunks Add color and flavor.
  • 1 each green bell pepper, cut into chunks Add color and flavor.
  • 1 tablespoon olive oil For added flavor and moisture.
  • to taste salt and pepper For seasoning.
  • as needed skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine the pork cubes, pineapple chunks, red and green bell peppers, BBQ sauce, olive oil, salt, and pepper.
  3. Thread the pork, pineapple, and bell peppers onto the skewers alternately.
Cooking
  1. Grill the skewers for 10-15 minutes, turning occasionally, until the pork is cooked through.
Serving
  1. Serve hot with fresh vegetables or a light salad. Add a squeeze of fresh lime juice for extra flavor.

Notes

Can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat on the grill or in the oven.
