Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix peaches with 1/2 cup of sugar and set aside.
- In another bowl, combine flour, remaining sugar, baking powder, and salt.
- Stir in the milk and melted butter, then mix well.
- Pour the batter into a greased baking dish.
- Spoon the peach mixture over the batter. Do not stir.
Baking
- Bake for 35-40 minutes or until golden brown and bubbly.
- Serve warm, optionally with a sprinkle of cinnamon on top.
Notes
To serve, consider offering a small portion with low-fat vanilla yogurt or whipped cream to add protein without excessive richness. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or can be frozen for up to 3 months. For meal prep, you can wash and slice peaches, prepare the batter, and store ingredients separately until you're ready to bake.
