  • 1 cup cherry tomatoes Halved if desired
  • 1/2 cup Kalamata olives Pitted
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano Can be replaced with fresh herbs like thyme or rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine chicken breasts, cherry tomatoes, and Kalamata olives.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  4. Toss everything together to coat the chicken and vegetables.
Cooking
  1. Bake for about 25-30 minutes or until the chicken is cooked through.
  2. Garnish with fresh parsley before serving.
