Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
For the filling
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
For the layers
  • 2 cups fresh strawberries, sliced

Preparation
  1. In a bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of your serving glasses to form the crust.
  2. In a large bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form. Fold this whipped cream into the cream cheese mixture gently, creating a light and airy filling.
  4. Begin layering your parfaits by adding a layer of the cream cheese mixture followed by a layer of sliced strawberries in the glasses. Start with the cream cheese mixture.
  5. Repeat the layers until your glasses are filled, ensuring the last layer is topped off with fresh strawberries.
  6. Refrigerate the parfaits for at least 2 hours before serving.

Notes

These parfaits can be stored in the refrigerator for up to 3 days. Cover them with plastic wrap to keep them fresh. Freezing is not recommended. Healthier versions can be made using Greek yogurt instead of cream cheese and sugar substitutes. Gluten-free versions can also be made using gluten-free graham crackers.
