Preparation
- In a bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of your serving glasses to form the crust.
- In a large bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form. Fold this whipped cream into the cream cheese mixture gently, creating a light and airy filling.
- Begin layering your parfaits by adding a layer of the cream cheese mixture followed by a layer of sliced strawberries in the glasses. Start with the cream cheese mixture.
- Repeat the layers until your glasses are filled, ensuring the last layer is topped off with fresh strawberries.
- Refrigerate the parfaits for at least 2 hours before serving.
Notes
These parfaits can be stored in the refrigerator for up to 3 days. Cover them with plastic wrap to keep them fresh. Freezing is not recommended. Healthier versions can be made using Greek yogurt instead of cream cheese and sugar substitutes. Gluten-free versions can also be made using gluten-free graham crackers.
