No-Bake Cottage Cheese Brownie Batter Protein Bites

These no-bake protein bites are rich and delicious, tasting just like brownie batter while providing a good dose of protein.

Main ingredients
  • 1 cup cottage cheese full fat or low fat, based on preference
  • 3/4 cup chocolate or vanilla protein powder use a scoop size you like
  • 1/2 cup natural peanut butter or almond butter or sunflower seed butter for nut-free
  • 1/4 cup cocoa powder unsweetened for brownie flavor
  • 1/4 to 1/3 cup rolled oats or almond flour for binding
  • 2 to 3 tablespoons honey or maple syrup sweeten to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons mini chocolate chips or chopped dark chocolate optional
  • 2 tablespoons shredded coconut, cocoa powder, or chopped nuts optional to roll bites in

Method
 

Preparation
  1. Add the cottage cheese, nut butter, honey, and vanilla to your blender or food processor. Blend until smooth and creamy.
  2. Stop and scrape the sides. Add the protein powder, cocoa powder, oats or almond flour, and a pinch of salt. Pulse until the mixture comes together into a thick batter. Adjust the texture by adding more oats if too wet or a small amount of liquid if too dry.
  3. Stir in the mini chocolate chips by hand if using. Taste and add more sweetener if desired.
  4. Use a cookie scoop or tablespoon to portion the batter. Roll each portion into balls, wetting your hands if necessary.
  5. Roll finished balls in shredded coconut, cocoa powder, or chopped nuts if desired. Place them on a parchment-lined tray.
  6. Chill the tray in the fridge for at least 30 minutes so the bites firm up. After chilling, transfer the bites to an airtight container.

Notes

Store the bites in an airtight container in the fridge for up to 5 days. For longer storage, freeze for up to 3 months. Allow to thaw in the fridge or enjoy directly from the freezer.
