- Heat olive oil in a large pan over medium heat.
- Add cubed tofu and cook until golden and crispy, about 5-7 minutes.
- Remove tofu from the pan and set aside.
- In the same pan, add mushrooms and stir-fry for 3-4 minutes until browned.
- Add garlic and ginger, and sauté for another minute.
- Add your choice of vegetables and stir-fry until just tender.
- Return the crispy tofu to the pan and add soy sauce, mixing everything well.
- Cook for an additional 2-3 minutes, then season with salt and pepper to taste.
- Serve hot.
Notes
Great for meal prep, this stir-fry can be stored in an airtight container in the fridge for up to four days. Serve with brown rice or quinoa for extra fiber.
