Miso & Pickled Ginger Tuna Mayo Jackets

Ingredients
  

For the Jackets
  • 4 medium medium potatoes For baking
For the Filling
  • 1 can tuna (in water or oil) Drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon miso paste
  • 2 tablespoons pickled ginger, finely chopped
  • 1 tablespoon spring onions, chopped
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 200°C (or 400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times.
Baking the Potatoes
  1. Place the potatoes on a baking tray and bake for 45-60 minutes until tender.
  2. Check if they are done by inserting a fork; if it goes in easily, they're ready.
Preparing the Filling
  1. While the potatoes are baking, open the can of tuna and drain any excess liquid.
  2. In a large mixing bowl, add tuna, mayonnaise, miso paste, pickled ginger, and spring onions. Mix well with a fork.
Assembling the Jackets
  1. Once the potatoes are done, remove them from the oven and let cool for a few minutes.
  2. Cut each potato in half lengthwise and scoop out some of the insides.
  3. Spoon the tuna mayo mixture into each potato half.
Final Bake
  1. Return the filled potatoes to the oven and bake for an additional 10-15 minutes.
Serving
  1. Once the jackets are warm and slightly golden, remove them from the oven and enjoy.

Notes

Best served warm with a side salad or steamed vegetables. Enjoy with a dollop of extra mayonnaise or fresh herbs.
