Preparation
- Preheat the oven to 200°C (or 400°F).
- Wash the potatoes thoroughly and prick them with a fork several times.
Baking the Potatoes
- Place the potatoes on a baking tray and bake for 45-60 minutes until tender.
- Check if they are done by inserting a fork; if it goes in easily, they're ready.
Preparing the Filling
- While the potatoes are baking, open the can of tuna and drain any excess liquid.
- In a large mixing bowl, add tuna, mayonnaise, miso paste, pickled ginger, and spring onions. Mix well with a fork.
Assembling the Jackets
- Once the potatoes are done, remove them from the oven and let cool for a few minutes.
- Cut each potato in half lengthwise and scoop out some of the insides.
- Spoon the tuna mayo mixture into each potato half.
Final Bake
- Return the filled potatoes to the oven and bake for an additional 10-15 minutes.
Serving
- Once the jackets are warm and slightly golden, remove them from the oven and enjoy.
Notes
Best served warm with a side salad or steamed vegetables. Enjoy with a dollop of extra mayonnaise or fresh herbs.
