Ingredients
  

Cookie Dough Ingredients
  • 1 cup unsalted butter, softened Can use margarine, but butter is preferred for taste.
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon mint extract Can substitute with peppermint extract for a stronger flavor.
  • 1 teaspoon green food coloring Can replace with natural spinach powder.
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Topping
  • 1 cup chocolate hugs or kisses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until smooth.
  3. Beat in the eggs, mint extract, and green food coloring.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 8-10 minutes until the edges are lightly browned.
  2. Remove from the oven and immediately press a chocolate hug or kiss into the center of each cookie.
  3. Allow to cool before serving.

Notes

Store baked cookies in an airtight container for up to five days. Freeze baked cookies for up to three months. Thaw at room temperature before serving.
