Preparation
- Place 12 vanilla wafer cookies on a microwave-safe plate, flat side facing up.
- Place one segment of chocolate on each cookie.
- Cut each marshmallow in half width-wise to form two flatter-looking marshmallows and place them on top of each chocolate segment.
- Microwave the s'mores for 25 to 30 seconds. The marshmallows will expand as they heat.
- Remove the plate from the microwave and carefully top each marshmallow with a cookie, squishing the marshmallow down.
- For multiple batches, use parchment paper for easier cleanup.
- Serve warm for maximum gooeyness. Store leftovers in an airtight container and reheat briefly in the microwave to restore some of the texture.
Notes
Consider serving one or two s'mores per person. Pair with fresh fruit or yogurt for a balanced meal option. Store leftovers at room temperature for 1-2 days, or freeze for longer storage.
