Preparation
- Cook the macaroni according to package instructions, drain, and let cool.
- In a large bowl, combine the cooled macaroni, roasted corn, black beans, and diced bell pepper.
Make the dressing
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
Combine and chill
- Pour the dressing over the macaroni mixture and toss to combine.
- If desired, add cooked chicken or ham for extra protein.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to three days. Not recommended to freeze due to the creamy dressing. Prepare pasta and vegetables ahead of time and add dressing fresh before serving.
