Preparation
- Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper.
- In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until just combined.
- Shape the mixture into a loaf and place in the prepared dish.
Baking the Meatloaf
- Bake in the preheated oven for 50-60 minutes until the meat thermometer reads 160°F (71°C).
Making the Mushroom Gravy
- In a skillet, melt butter over medium heat and add sliced mushrooms. Cook until golden brown, about 5-7 minutes.
- Sprinkle flour over mushrooms and stir for 2 minutes. Gradually whisk in beef broth followed by cream. Stir until gravy reaches a velvety consistency, about 5-7 minutes. Season to taste.
Serving
- Let the meatloaf rest for a few minutes, then slice and ladle mushroom gravy over each portion.
Notes
Store leftover meatloaf in an airtight container in the fridge for up to 3-4 days. For meal prep, you can make it ahead, store it, and reheat when ready to eat.
