Ingredients
  

For the Meatloaf
  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
For the Mushroom Gravy
  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place in the prepared dish.
Baking the Meatloaf
  1. Bake in the preheated oven for 50-60 minutes until the meat thermometer reads 160°F (71°C).
Making the Mushroom Gravy
  1. In a skillet, melt butter over medium heat and add sliced mushrooms. Cook until golden brown, about 5-7 minutes.
  2. Sprinkle flour over mushrooms and stir for 2 minutes. Gradually whisk in beef broth followed by cream. Stir until gravy reaches a velvety consistency, about 5-7 minutes. Season to taste.
Serving
  1. Let the meatloaf rest for a few minutes, then slice and ladle mushroom gravy over each portion.

Notes

Store leftover meatloaf in an airtight container in the fridge for up to 3-4 days. For meal prep, you can make it ahead, store it, and reheat when ready to eat.
