- Add the butter to a stand mixer and beat on medium speed for 1 minute until smooth and creamy.
- Add the powdered sugar and mix on medium speed until well combined.
- Add the vanilla extract and a pinch of salt, then beat until smooth.
- Add the milk powder, almond flour, cake flour, and matcha powder, mixing until evenly combined.
- Gather the dough into a ball, wrap tightly in plastic wrap, and chill for at least 30 minutes.
- Cut the dough into 12 equal pieces, roll into balls, and place on a parchment-lined baking tray.
- Preheat oven to 180°C / 350°F and bake for about 15 minutes.
- Let cool on the tray for about 10 minutes, then coat with powdered sugar.
Notes
Store in an airtight container at room temperature for up to a week, or in the fridge for longer freshness. Dough can be refrigerated for up to 5 days or frozen for 3 weeks.
