Base ingredients
  • 85 g unsalted butter Ensure butter is unsalted for best results.
  • 6 cups regular marshmallows Mini marshmallows can be used as a substitute.
  • 4 cups Rice Bubbles (Krispies) Make sure to use regular Rice Bubbles.
  • ½ tsp salt To balance the sweetness.
  • as needed red food coloring Use drops to achieve desired color.

Method
 

Preparation
  1. Start by filling a small pot with ½ cup of water. Heat the water until it starts to boil.
  2. Take a large, heatproof bowl and place it over the pot of boiling water. Add the unsalted butter and regular marshmallows into the bowl. Whisk them together continuously for about 2 to 4 minutes until it turns into a smooth paste.
  3. Carefully lift the bowl off the pot and add ½ teaspoon of salt and a drop or two of red food coloring. Whisk until well blended.
  4. In a large mixing bowl, put the Rice Bubbles and pour the melted marshmallow mixture over them. Mix thoroughly to coat each Rice Bubble.
  5. With oiled hands, shape the mixture into oval shapes resembling brains and use a butter knife to make a dent in the center of each.
  6. Dip a toothpick in red food coloring and draw veins onto the brains for a spooky look.
  7. Place the finished treats in an airtight container for storage.

Notes

Store these treats in an airtight container at room temperature for up to a week. They can also be frozen for about a month; just thaw at room temperature before serving.
