Preparation
- Start by filling a small pot with ½ cup of water. Heat the water until it starts to boil.
- Take a large, heatproof bowl and place it over the pot of boiling water. Add the unsalted butter and regular marshmallows into the bowl. Whisk them together continuously for about 2 to 4 minutes until it turns into a smooth paste.
- Carefully lift the bowl off the pot and add ½ teaspoon of salt and a drop or two of red food coloring. Whisk until well blended.
- In a large mixing bowl, put the Rice Bubbles and pour the melted marshmallow mixture over them. Mix thoroughly to coat each Rice Bubble.
- With oiled hands, shape the mixture into oval shapes resembling brains and use a butter knife to make a dent in the center of each.
- Dip a toothpick in red food coloring and draw veins onto the brains for a spooky look.
- Place the finished treats in an airtight container for storage.
Notes
Store these treats in an airtight container at room temperature for up to a week. They can also be frozen for about a month; just thaw at room temperature before serving.
