  • 1 cup salted butter, cold and cubed
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, cold
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the cold, cubed butter, granulated sugar, and brown sugar until smooth.
  3. Add the cold eggs and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add dry ingredients to the butter mixture, blending until just combined.
  5. Scoop large portions of dough and place them on a baking sheet lined with parchment paper, spacing them apart.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Remove from oven and let cool slightly before transferring to a wire rack.
  3. While the cookies cool, top with festive sprinkles.
