Ingredients
  

Fresh Ingredients
  • 2 ripe mangoes, peeled and julienned
  • 1 cup green cabbage, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 1 Juice of lime
  • 1 tablespoon honey or agave syrup
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mango, cabbage, bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, honey, salt, and pepper.
  3. Pour the dressing over the slaw and toss to coat evenly.
  4. Let it sit for at least 10 minutes to allow the flavors to meld.
  5. Serve chilled as a vibrant side dish.

Notes

Mango Slaw is best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to two days. For a more fiber-rich version, add in some shredded carrots or cucumbers.
