Ingredients
  

For the Potatoes
  • 4 large large potatoes Cut into small cubes for roasting.
  • 2 tablespoons Olive oil For tossing potatoes.
  • to taste Salt and pepper For seasoning.
For the Filling
  • 1 pound ground beef or turkey Can substitute with ground chicken or lentils for a healthier option.
  • 1 packet taco seasoning Follow package instructions for seasoning meat.
Toppings
  • 1 cup shredded cheese Your choice of cheese.
  • 1 cup diced tomatoes
  • 1 cup chopped lettuce
  • 1 avocado, diced
  • to taste Sour cream Optional.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the potatoes into small cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
Cooking
  1. Roast potatoes in the oven for about 25-30 minutes, until crispy.
  2. In a skillet, brown the ground meat and add taco seasoning, cooking according to package instructions.
Assembly
  1. Once the potatoes are done, assemble your taco bowls by placing the roasted potatoes at the bottom, topped with seasoned meat, cheese, tomatoes, lettuce, and avocado.
  2. Add sour cream if desired and serve immediately.

Notes

Consider pairing with steamed broccoli or a mixed green salad for a balanced meal. Use lime slices for a refreshing kick.
