Ingredients
  

Chicken and Marinade
  • 2 cups boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil Can be substituted with cooking spray
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon lemon juice For added flavor
Vegetables
  • 1 cup bell peppers, diced Any color
  • 1 cup zucchini, sliced
  • to taste Fresh herbs (parsley or basil) for garnish Enhances flavor and presentation

Method
 

Preparation
  1. Start by dicing the boneless chicken breasts into bite-sized pieces.
  2. In a large mixing bowl, combine the diced chicken with olive oil, garlic powder, paprika, black pepper, and salt. Toss until well coated.
  3. Let the chicken marinate for about 15 minutes.
  4. Add diced bell peppers and sliced zucchini to the chicken mixture.
Cooking
  1. Preheat the air fryer to 375°F (190°C).
  2. Place the marinated chicken and vegetables into the air fryer basket.
  3. Cook for about 12-15 minutes, shaking the basket halfway through.
  4. Once cooked, remove from the air fryer and drizzle with lemon juice.
  5. Garnish with fresh herbs before serving.

Notes

This dish can be stored in the refrigerator for up to 3 days and can be frozen for about 3 months. Reheat in microwave or oven.
