Preparation of Batter
- In a large jug or bowl, whisk the eggs and milk together until smooth and well combined.
- In a separate bowl, combine the self-raising flour, baking powder, and a pinch of salt.
- Pour the egg and milk mixture into the flour mixture and stir until just combined.
- Stir in the caster sugar and then add the melted butter until well combined.
- Set the batter aside for 30 minutes to rest, if time allows.
Cooking Pancakes
- Heat a knob of butter in a non-stick frying pan over medium heat.
- Add a ladle of batter to the pan to form a pancake about 4-5 inches in diameter.
- Cook for 30 seconds until the bottom is set but the top is liquid.
- Quickly spoon 2 teaspoons of strawberry jam onto the center of the pancake.
- Cover the jam with additional batter and cook for about 2 minutes until bubbles appear on the surface.
- Flip the pancake carefully and cook for another 1-2 minutes until golden brown.
Notes
For best results, serve warm and dust with granulated sugar. Consider different jam flavors or adding vanilla extract for a twist.
