Ingredients
  

For the Pancake Base
  • 2 large large eggs
  • 300 ml milk
  • 250 g self-raising flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 25 g caster sugar
  • 50 g unsalted butter, melted
For the Jam Center
  • 12 teaspoons strawberry jam
For Serving
  • Granulated sugar for sprinkling

Method
 

Preparation of Batter
  1. In a large jug or bowl, whisk the eggs and milk together until smooth and well combined.
  2. In a separate bowl, combine the self-raising flour, baking powder, and a pinch of salt.
  3. Pour the egg and milk mixture into the flour mixture and stir until just combined.
  4. Stir in the caster sugar and then add the melted butter until well combined.
  5. Set the batter aside for 30 minutes to rest, if time allows.
Cooking Pancakes
  1. Heat a knob of butter in a non-stick frying pan over medium heat.
  2. Add a ladle of batter to the pan to form a pancake about 4-5 inches in diameter.
  3. Cook for 30 seconds until the bottom is set but the top is liquid.
  4. Quickly spoon 2 teaspoons of strawberry jam onto the center of the pancake.
  5. Cover the jam with additional batter and cook for about 2 minutes until bubbles appear on the surface.
  6. Flip the pancake carefully and cook for another 1-2 minutes until golden brown.

Notes

For best results, serve warm and dust with granulated sugar. Consider different jam flavors or adding vanilla extract for a twist.
