Preparation
- Preheat the grill to medium-high heat.
- Season chicken breasts with salt and pepper, then brush with honey BBQ sauce.
- Grill chicken for 6-7 minutes on each side, basting with more sauce until fully cooked.
Cooking Potatoes
- Meanwhile, wash and cube the potatoes.
- Boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add minced garlic, olive oil, and cheese to the potatoes, mixing until well combined and cheese is melted.
Serving
- Serve the grilled chicken alongside the cheesy garlic Parmesan potatoes. Garnish with fresh parsley.
Notes
Best served warm. Add steamed broccoli or a mixed green salad to fill half your plate with vegetables. Store leftovers in an airtight container for up to 4 days or freeze for up to 2 months. Reheat thoroughly before eating.
