  • 4 pieces chicken breasts Fresh, boneless and skinless
  • 1 cup honey BBQ sauce For marinating chicken
  • 2 pounds potatoes Yukon gold or russet recommended
  • 1 cup shredded cheese (Cheddar or Parmesan) For mixing with potatoes
  • 3 cloves garlic, minced Enhances flavor
  • 2 tablespoons olive oil For mixing with potatoes
  • Salt and pepper to taste For seasoning chicken and potatoes
  • Fresh parsley for garnish Optional, for serving

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season chicken breasts with salt and pepper, then brush with honey BBQ sauce.
  3. Grill chicken for 6-7 minutes on each side, basting with more sauce until fully cooked.
Cooking Potatoes
  1. Meanwhile, wash and cube the potatoes.
  2. Boil them in salted water until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add minced garlic, olive oil, and cheese to the potatoes, mixing until well combined and cheese is melted.
Serving
  1. Serve the grilled chicken alongside the cheesy garlic Parmesan potatoes. Garnish with fresh parsley.

Notes

Best served warm. Add steamed broccoli or a mixed green salad to fill half your plate with vegetables. Store leftovers in an airtight container for up to 4 days or freeze for up to 2 months. Reheat thoroughly before eating.
