Honey BBQ Chicken Rice

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
Seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
Optional Ingredients
  • 1 cup mixed vegetables Optional, add for extra nutrition
  • Chopped green onions For garnish

Method
 

Preparation
  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper to cover all sides.
  2. In a large skillet, heat over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In a mixing bowl, combine BBQ sauce and honey to create the sauce mixture.
Cooking
  1. In the same skillet, toast the uncooked rice for 1–2 minutes.
  2. Add chicken broth and pour in half of the BBQ sauce mixture. Stir to combine.
  3. Return the seared chicken to the pan and pour the remaining sauce over it.
  4. Cover the skillet and let it simmer on low heat for 15 minutes.
  5. After 15 minutes, add mixed vegetables if using, cover, and cook for 5 more minutes or until the rice is tender and chicken is cooked through.
  6. Let the dish sit for 5 minutes before serving. Garnish with chopped green onions.

Notes

This dish is great for meal prep and can be stored in an airtight container for 3-4 days in the fridge. For longer storage, freeze for up to 2 months.
