Preparation
- Preheat the oven to 350°F (175°C). Grease and flour an 8×8-inch baking dish.
- In a bowl, mix flour and powdered sugar, then cut in butter until crumbly. Press into the bottom of the baking dish.
- In another bowl, combine chopped rhubarb, granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt. Mix well.
- Pour the rhubarb mixture over the crust.
Baking
- Bake for 25-30 minutes or until set and lightly golden.
- Allow to cool, then cut into bars and serve.
Notes
Serve with a dollop of Greek yogurt for added creaminess and protein. Store in an airtight container for up to one week.
