Ingredients
  

Crust Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened Used for the crust
Filling Ingredients
  • 1 cup rhubarb, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice Freshly squeezed
  • 1 tablespoon lemon zest For added lemon flavor
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour an 8×8-inch baking dish.
  2. In a bowl, mix flour and powdered sugar, then cut in butter until crumbly. Press into the bottom of the baking dish.
  3. In another bowl, combine chopped rhubarb, granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt. Mix well.
  4. Pour the rhubarb mixture over the crust.
Baking
  1. Bake for 25-30 minutes or until set and lightly golden.
  2. Allow to cool, then cut into bars and serve.

Notes

Serve with a dollop of Greek yogurt for added creaminess and protein. Store in an airtight container for up to one week.
