- Heat a large pot over medium heat. Add the ground turkey or chicken and cook until browned, breaking it up with a spoon as it cooks.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Pour in the chicken or vegetable broth and crushed tomatoes. Bring the mixture to a boil over high heat.
- Once boiling, add the broken lasagna noodles and Italian seasoning. Season with salt and pepper to taste. Lower the heat and let it simmer for about 15-20 minutes, until the noodles are cooked and soft.
- Stir in the fresh spinach and cook for a few more minutes until the spinach is wilted and bright green.
- Ladle the soup into bowls and top each with ricotta, shredded mozzarella, and grated Parmesan cheese. Serve hot.
Notes
Serve with crusty bread or a side salad for a complete meal. Extra Italian seasoning or fresh herbs can enhance the flavor before serving.
