  • 1 lb ground turkey or chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 2 cups fresh spinach
Cheeses
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Seasonings
  • 1 tsp Italian seasoning

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the ground turkey or chicken and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Pour in the chicken or vegetable broth and crushed tomatoes. Bring the mixture to a boil over high heat.
  4. Once boiling, add the broken lasagna noodles and Italian seasoning. Season with salt and pepper to taste. Lower the heat and let it simmer for about 15-20 minutes, until the noodles are cooked and soft.
  5. Stir in the fresh spinach and cook for a few more minutes until the spinach is wilted and bright green.
  6. Ladle the soup into bowls and top each with ricotta, shredded mozzarella, and grated Parmesan cheese. Serve hot.

Notes

Serve with crusty bread or a side salad for a complete meal. Extra Italian seasoning or fresh herbs can enhance the flavor before serving.
