Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Spray a 9x13 baking pan with cooking spray.
  3. Spread the chopped red bell pepper, onion, and spinach evenly at the bottom of the baking dish.
  4. In a large mixing bowl, crack the 12 eggs and whisk them thoroughly.
  5. Add in the full-fat cottage cheese, garlic, Italian seasoning, kosher salt, ground black pepper, and 1/4 cup of shredded gouda cheese; mix well.
  6. Pour the egg mixture over the layered vegetables, using a spatula to spread it evenly.
  7. Sprinkle the remaining shredded cheddar cheese on top.
Baking
  1. Place the baking dish in the preheated oven and bake for about 50-55 minutes, or until set in the center.
  2. Remove from the oven and allow to cool for at least 15 minutes before slicing.
