Preparation
- Rinse the quinoa under cold water to remove any bitterness, and drain well.
- In a medium pot, combine the rinsed quinoa and water or almond milk. Bring to a boil over medium heat.
Cooking
- Reduce heat to a simmer, cover the pot, and cook for about 15 minutes, until fluffy and all liquid is absorbed.
- Stir in the diced apple, cinnamon, honey or maple syrup, and a pinch of salt, mixing well.
- Cook for an additional 5 minutes over low heat to soften the apples and meld the flavors.
Serving
- Remove from heat and top with nuts and raisins or dried cranberries before serving.
- Serve warm, or chill for a refreshing meal prep option.
Notes
For added variety, mix in different fruits or nuts. Stores well in the fridge for up to 4 days. Consider adding nut butter or spices like nutmeg or ginger for more flavor.
