Method
 

Preparation
  1. Rinse the quinoa under cold water to remove any bitterness, and drain well.
  2. In a medium pot, combine the rinsed quinoa and water or almond milk. Bring to a boil over medium heat.
Cooking
  1. Reduce heat to a simmer, cover the pot, and cook for about 15 minutes, until fluffy and all liquid is absorbed.
  2. Stir in the diced apple, cinnamon, honey or maple syrup, and a pinch of salt, mixing well.
  3. Cook for an additional 5 minutes over low heat to soften the apples and meld the flavors.
Serving
  1. Remove from heat and top with nuts and raisins or dried cranberries before serving.
  2. Serve warm, or chill for a refreshing meal prep option.

Notes

For added variety, mix in different fruits or nuts. Stores well in the fridge for up to 4 days. Consider adding nut butter or spices like nutmeg or ginger for more flavor.
