Ingredients
  

For the cookie bars
  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 2 ¼ cups all-purpose flour
  • 2 tsp baking powder
For the frosting
  • ½ cup salted butter, softened
  • 2 cups powdered sugar
  • 2 tsp vanilla extract (for frosting)
  • 2 tbsp heavy cream
  • to taste orange food coloring (optional)
  • to taste sprinkles (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Line a 9×13-inch baking pan with parchment paper.
  3. In a mixing bowl, cream the softened butter and granulated sugar until fluffy.
  4. Add the vanilla and egg to the butter mixture and mix until smooth.
  5. Incorporate the all-purpose flour and baking powder, mixing until a dough forms.
  6. Press the cookie dough evenly into the prepared baking pan.
Baking
  1. Bake for 14-16 minutes or until the edges are lightly golden. Let cool completely.
Frosting
  1. In a separate bowl, beat the softened butter, powdered sugar, vanilla, and cream until peaks form.
  2. Add food coloring to the frosting and mix until desired shade is reached.
  3. Spread the frosting over the cooled sugar cookie bars.
  4. Decorate with Halloween sprinkles.

Notes

Store leftover cookie bars in an airtight container at room temperature for 3-5 days. They freeze well for up to three months.
