  • 4 large large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup Gruyère cheese, grated
  • 1 cup cooked ham, diced
  • 2 tablespoons fresh chives, chopped
  • Butter or oil for greasing the pan

Method
 

Preparation
  1. Preheat your oven to 220°C (425°F).
  2. Grease your muffin tin with butter or oil.
  3. In a blender, combine eggs, milk, flour, and salt. Blend until smooth. Alternatively, whisk ingredients in a bowl until well combined.
  4. Stir in grated Gruyère cheese, diced ham, and chopped chives into the batter.
  5. Pour the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Bake for approximately 20-25 minutes or until the mini Dutch babies are puffed up and golden brown.
  2. Remove from the oven and let cool in the pan for a few minutes before carefully removing.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in a toaster oven or conventional oven to maintain fluffiness. Can also be frozen for up to 2 months.
