Ingredients
  

Main ingredients
  • 2 cups cooked rice or quinoa
  • 1 lb chicken breast, marinated
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
Marinade and dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 Tzatziki sauce (store-bought or homemade)

Method
 

Preparation
  1. Marinate the chicken in olive oil, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
  3. While the chicken is grilling, prepare the tzatziki sauce.
  4. In a bowl, combine the cooked rice or quinoa with the cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and olives.
  5. Slice the grilled chicken and add it to the bowls.
  6. Drizzle with tzatziki sauce and enjoy!
