  • 4 slices thick slices of artisan sourdough or whole grain bread Choose a sturdy bread to prevent sogginess.
  • 2 large ripe avocados Should yield slightly to gentle pressure.
  • 1 tablespoon fresh lemon juice Prevents avocado from browning.
  • Sea salt and freshly cracked black pepper to taste
For the Gourmet Toppings
  • 2 medium heirloom tomatoes (or cherry tomatoes), sliced Showcase natural sweetness and acidity.

  • 2 tablespoons fresh basil leaves, chopped

  • 2 tablespoons crumbled feta cheese or goat cheese
  • 1 tablespoon pine nuts or pumpkin seeds For crunchy texture.

Method
 

Preparation
  1. Slice the sourdough or whole grain bread into thick pieces, about ¾-inch thick, and toast until golden brown and crispy.
  2. In a bowl, pit and scoop the avocados, mash them with a fork, add lemon juice, and season with salt and pepper to taste.
  3. Slice heirloom tomatoes into rounds or halve cherry tomatoes.
  4. Combine chopped basil, chives, and oregano with olive oil in a small bowl.
Assembly
  1. Spread a generous layer of seasoned avocado mixture on each slice of warm toast.
  2. Arrange tomato slices over the avocado, overlapping slightly.
  3. Sprinkle the herb and olive oil mixture over the tomatoes.
  4. Crumble feta or goat cheese over each slice, then add pine nuts or pumpkin seeds.
  5. Drizzle balsamic glaze over the toast if desired.

Notes

For a Vegan option, skip cheese and opt for nutritional yeast. Use sturdy bread to prevent sogginess. Avocado mixture can be prepared up to 2 hours in advance.
