  • 1 cup gluten-free all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup water
  • 2 tablespoons olive oil

Method
 

Preparation
  1. In a mixing bowl, combine the gluten-free flour, salt, and baking powder.
  2. Add the water and olive oil to the dry ingredients and mix until a dough forms.
  3. Divide the dough into small balls and roll each ball out into a flat circle.
Cooking
  1. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown.
  2. Remove from the skillet and let cool slightly before serving.

Notes

Store cooled flatbreads in an airtight container or zip-top bag in the fridge for up to 4 days. For longer storage, freeze flatbreads in a sealed freezer bag for up to 3 months. This recipe is great for meal prep because you can make many at once and freeze for the week.
